Pepper Salt Taishi Tofu

A traditional, nostalgic vegetarian dish featuring tofu and water chestnuts as the main ingredients, steamed and then fried.

Pepper Salt Taishi Tofu

Ingredients

Tofu 340 g
Water chestnuts (peeled, washed and grated) 224 g
Shiitake mushrooms (finely diced) 2 tbsp
Grated carrot 1 tbsp
Egg whites 2
Cilantro (chopped) 1
Cornstarch 1/2 cup
Salt (seasoning) 1 tsp
Sugar (seasoning) 1/2 tsp
Vegetarian chicken powder (seasoning) 1 tsp
White pepper (seasoning) a pinch
Sesame oil (seasoning) a pinch
Pepper salt (for sprinkling at the end) to taste

Instructions

Step 1

Wash and grate the water chestnuts. Add the diced shiitake mushrooms, grated carrot, 1 egg white, and cornstarch, and mix into a smooth paste.

Mash the tofu and combine it together with the remaining egg white into the water chestnut mixture. Add the seasonings and cilantro and mix thoroughly.

Prepare a square pan lined with parchment paper at the bottom. Pour the tofu mixture into the pan and press it flat by hand. Steam over high heat for 10 minutes. Remove, let cool, then cut into diamond shapes and coat with a light layer of dry cornstarch.

Heat oil until hot, add the tofu pieces, and deep-fry until golden brown. Remove, drain the oil, and sprinkle with pepper salt to finish.
