Instructions
Bottom Topping
Preheat oven to about 177°C (originally 117°C, likely a typo), use a strainer to separate the canned pineapple from its juice. Microwave the butter for 1.5 minutes until melted. Sprinkle brown sugar evenly over the butter. Spread pineapple evenly over the brown sugar, making sure to fill the corners as well.
Mixing Dry Ingredients
Sift the flour, baking powder, and salt together.
Making Egg Yolk Batter
Add 2 tbsp of sugar to the egg yolks and beat with a whisk until the yolk color changes from dark yellow to light yellow or even slightly white, and the sugar is mostly dissolved. Add vanilla powder and 2 tbsp of pineapple juice and mix well. Add the flour mixture and stir to combine. Add 3 tbsp of pineapple juice and mix well.
Whipping Egg Whites and Combining
In a small bowl, beat the egg whites until they cling to the mixer when lifted, forming an inverted small mountain. Use a rubber spatula to gently fold the egg whites into the egg yolk batter. Be careful not to stir - draw a line through the middle, then circle around, to avoid releasing the air from the egg whites.
Baking
Pour the mixed batter into the glass dish lined with pineapple, and bake in the oven for 30-35 minutes. When the aroma comes out, test with a toothpick until the toothpick comes out clean.
Demolding
Let the cake cool for 5 minutes. When the glass dish is no longer hot to the touch, use a thin knife to separate the glass dish from the cake along the edges. Cut off the hard crust on the top of the cake (optional). Find a larger flat plate, cover the glass dish, and flip it over so the pineapple that was originally on the bottom is now on top. Gently tap the bottom of the glass dish with a knife, then remove the dish.
