Pork and Bok Choy Dumplings

Step 1
Finely chop the scallion and ginger.

Add refined salt, thirteen-spice powder, light soy sauce, oyster sauce, chicken bouillon, and minced ginger to the ground pork. Add water as needed in batches, stirring in one consistent direction with chopsticks until the mixture is thick and elastic.

Add chopped scallion and an appropriate amount of sesame oil. Add cooking oil and mix thoroughly until combined.

Wash the bok choy, blanch it, then shock it in cold water.

Squeeze the bok choy dry, chop it finely, then add it to the ground pork mixture and mix well.

Add 3g of refined salt to the all-purpose flour to increase its elasticity. Mix with room-temperature water, adding water as needed in batches, stir until the mixture forms flaky crumbs, then knead repeatedly by hand until a smooth dough forms.

Roll the dough into a long log, then cut it into evenly sized dough pieces.

Flatten each dough piece.

Roll each dough piece into a thin dumpling wrapper.

Place a portion of filling in the center of each wrapper.

Fold and seal the wrappers to form dumplings.

Wrap all the dumplings and set them aside ready for cooking; do not leave them for too long before cooking.

Bring a pot of water to a rolling boil, add the dumplings, then cover the pot. When the water boils again, add a splash of cold water, then cover and continue cooking. Repeat this process when the water boils a second time, then uncover and cook for a short while. The dumplings are cooked through when they puff up and float to the surface.
