Rock Sugar White Fungus Soup
A sweet soup simmered with white fungus and rock sugar as the main ingredients, accented by green plums and hawthorn cake. Best served chilled.

White fungus (prepared/soaked)
150 g
Rock sugar
200 g
Green plum (cut into diamond slices)
5 g
Hawthorn cake (cut into diamond slices)
5 g
Sweet osmanthus syrup

Step 1
Wash the white fungus; cut the green plum and hawthorn cake into diamond-shaped slices.

Place the white fungus in a pot, add water and bring to a boil, then reduce to low heat and simmer until the white fungus becomes a thick, viscous soup.

Place the rock sugar in a separate pot, add water and bring to a boil, add the sweet osmanthus syrup, then pour the sugar water into the white fungus soup.

Sprinkle the green plum and hawthorn cake slices into the white fungus soup and bring to a boil. Let cool, then place in the refrigerator to chill; serve cold for the best flavor.
