Rocky Road Bites

Rocky Road Bites

Ingredients

Quality bittersweet or semisweet chocolate, chopped 10 ounces
Unsalted butter 2 tablespoons
Miniature marshmallows 1½ cups
Walnuts, toasted and coarsely chopped 1¼ cups
Whole graham crackers ((3 whole rectangles), broken into ½-inch pieces (about 1 cup)) 6 pieces

Instructions

Prepare the pan

Line an 8-inch square baking pan with foil, pressing the foil into the corners and leaving 2-inch overhangs on two opposite sides.

Melt the chocolate

Place the chocolate and butter in a large metal or glass bowl set over a small saucepan of barely simmering water; stir constantly. When the chocolate is almost completely melted, remove the bowl from the heat and stir to melt the remaining bits. Let cool at room temperature for 5 minutes.

Combine and assemble

Stir in 1 cup of the marshmallows, 1 cup of the walnuts, and all of the graham cracker pieces. Spread the mixture in the prepared pan. Evenly sprinkle with the remaining ½ cup marshmallows and ¼ cup walnuts, pressing gently to adhere.

Set

Let stand at room temperature until the chocolate is set, about 2 hours, or refrigerate for about 1 hour.

Cut

Grasp the foil edges and lift the bars onto a cutting board. Peel the foil off the sides of the bars. Using a bench scraper or sharp knife, cut into 16 squares, then cut each square in half to make 32 small bars.
