Savory Peanut Spinach Stack

Story

This dish transforms simple spinach into a flavorful tower using a nutty, savory dressing. The peanuts are dry-roasted and blended into a creamy sauce, offering a delicious contrast to the crisp greens.

Ingredients

Fresh spinach 300g
Raw peanuts 50g
Dried goji berries 1 tbsp
Light soy sauce 1 tbsp
Salt 1/2 tsp
Chicken bouillon powder or MSG 1/4 tsp
Water 1-2 tbsp

Roast the peanuts

Rinse the raw peanuts and pat them dry. Place them in a cold wok or pan with cold oil and stir-fry over medium heat until golden brown and fragrant. Let them cool completely, then rub off the skins.

Prepare the peanut sauce

Crush or grind the roasted peanuts into a coarse paste. Mix the peanut paste with salt, light soy sauce, chicken bouillon powder, and a little water to reach a drizzle-able consistency.

Assemble the stack

Rinse the spinach and goji berries thoroughly. Drain the spinach well. Arrange the spinach leaves on a serving plate in a tall mound, drizzle the peanut sauce over the top, and sprinkle with the goji berries to serve.
