Sesame Spinach
Vibrant green in color, savory and refreshingly tangy, this cold dish is tossed with toasted sesame seeds.
Ingredients
Spinach (remove old leaves, cut off roots, wash, cut into about 6cm segments, blanch)

Sesame (remove impurities, slowly roast over low heat until golden)
20g
Fine salt

Scallion (cut into thin strips)

Ginger (cut into thin strips)

Step 1
Remove old leaves from spinach, cut off the roots, wash with clean water, and cut into approximately 6cm segments; remove impurities from sesame, place in a pan, slowly roast over low heat, and remove when golden; cut scallions and ginger into thin strips

Add water to the pan and bring to a boil, add the cut spinach, blanch briefly then remove, and rinse with cold water
