Shredded Chicken Salad with Radish Sprouts

Ingredients

chicken breast 1 large (about 200g)
cooking wine or shaoxing wine 1 tablespoon
salt 1/2 teaspoon plus extra to taste
freshly ground black pepper 1/4 teaspoon
green onions 2 stalks, thinly sliced
radish sprouts or bean sprouts 1 cup
sesame oil 1 teaspoon

Marinate the chicken

Place the chicken breast in a microwave-safe dish. Drizzle with cooking wine and season generously with salt and black pepper. Let it sit and absorb the flavors for about 10 minutes.

Cook in microwave

Cover the dish tightly with plastic wrap. Microwave on high power (600W) for 4 minutes until the chicken is fully cooked through. Remove and let it cool completely before handling.

Shred and toss

Once cooled, pull the chicken apart into thin strips following the natural grain of the meat. Add the shredded chicken to a mixing bowl along with radish sprouts, green onions, a pinch of salt, and sesame oil. Toss everything together until well combined. Serve immediately or chill briefly before serving.
