Shredded Pork with Sweet Bean Sauce

Ingredients

scallion whites 250g
sweet bean sauce 80g
cooking wine appropriate amount
MSG appropriate amount
salt appropriate amount
sliced ginger appropriate amount
cornstarch appropriate amount
white sugar 20g

cooking oil 150g

Step 1

Rinse the pork and cut into thin shreds, add cooking wine, salt, beaten egg, and cornstarch to coat and marinate.

Slice a small amount of scallion, cut the rest into thin shreds, and arrange on a plate. Lightly crush the ginger slices, place them together with 2g of scallion slices into a bowl, add a small amount of water to make scallion-ginger water.

Heat the pan, add oil and heat until hot, pour in the pork shreds and stir-fry until separated and 80% cooked, then remove and drain excess oil. Leave a small amount of base oil in the pan, add sweet bean sauce and stir-fry briefly, then add scallion-ginger water, MSG, and white sugar, stir-fry until the sugar melts and the sauce thickens, add the pork shreds, stir-fry until the sauce evenly coats the shreds, then serve.
