Ingredients

flour 60g
baking powder 1 teaspoon
egg 1
milk 3cl
grapeseed oil 4cl
Parmesan cheese (grated) 30g
smoked salmon (cut into small dice) 60g
green apple (cored and diced) ½
lime zest zest of 1 lime
salt to taste
pepper to taste
liquid crème fraîche (chilled, then whipped) 10cl
green apple (for the cream) ½
lime juice (for the cream) juice of 1 lime
lime zest (for the cream) zest of ½ lime

Instructions

1

Prepare the batter

Preheat the oven to 180°C (gas mark 6). Mix the flour with the baking powder. Whisk the eggs and gradually add the milk and oil while continuing to whisk. Fold in the flour mixture until you have a smooth batter. Then gently fold in the Parmesan, smoked salmon dice, green apple dice and half of the lime zest. Season with salt and pepper.

2

Bake

Pour the batter into a 6-cup muffin tin lined with paper cases, filling each about two-thirds full. Bake for 18–20 minutes until golden on top. Test with a toothpick — it should come out with no wet batter attached. Transfer to a wire rack to cool.

3

Make the apple and lime cream

Whip the cold crème fraîche into a Chantilly-style cream. Blend the green apple with the lime juice into a purée, then gently fold it into the whipped cream. Add the lime zest and season with salt.

4

Decorate

Pipe the cream onto the cupcakes using a round piping tip. Keep refrigerated. Garnish with a small piece of smoked salmon just before serving.
