Ingredients
Instructions
Step 1
Peel and wash the sweet potato, steam until cooked, let cool and mash into sweet potato puree; prepare 80g glutinous rice flour, 35g cornstarch, and an appropriate amount of sugar; these quantities can be adjusted during stir-frying.
Step 2
Add 1 tablespoon of sesame oil to a non-stick pan; you can also use salad oil or any oil you prefer. Add the sweet potato puree, sugar, milk powder, and cornstarch, and stir-fry, adding gradually; adjust the amount of flour according to the moisture.
Step 3
Stir-fry until fully cooked and reach this consistency, then let cool and set aside.
Step 4
Wash the purple sweet potato, steam until cooked, peel and mash into purple sweet potato puree. Since the puree is drier, during stir-frying, besides sesame oil, also add 20g milk, 30g cornstarch, and an appropriate amount of sugar.
Step 5
Add 1 tablespoon of sesame oil to a non-stick pan; you can also use salad oil or any oil you prefer. Add the purple sweet potato puree, sugar, milk, and cornstarch, and stir-fry, adding gradually; adjust the amounts of flour and milk according to the moisture.
Step 6
Stir-fry until fully cooked and reach this consistency, then let cool and set aside.
Step 7
Add 120g boiling water (above 80°C) to 120g premix powder and knead into a dough, then set aside.
Step 8
Divide both the sweet potato and purple sweet potato dough portions into two equal parts.
Step 9
Take half of each color, add an appropriate amount of rose jam, knead evenly to make the filling. Divide each color filling evenly into 30g portions.
Step 10
Take the other half to make the mooncake skin, about 25g each. Wear disposable gloves, wrap the purple filling with the yellow skin, and press to seal.
Step 11
Roll into a round shape, first press a yellow heart shape into the top of the mold, then place the wrapped mooncake into the mold and press to form. Using the same method, wrap yellow filling with purple skin, and white skin can wrap either yellow or purple filling.
Step 12
Take appropriate amounts of purple, yellow, and white dough to make flower and leaf shapes. Since there is oil, place them directly on plastic wrap and shape as you like.
Step 13
Place the finished snow skin mooncakes on top.
Step 14
All three colors are done, cut off the plastic wrap and it's ready.
