These handmade mochi treats are wonderfully soft and slightly sticky. The addition of wheat starch gives them a pleasant bounce, while the green tea provides a subtle, earthy aroma. Wear gloves during the shaping process to handle the warm dough easily.

Mix the Batter
Dissolve the sugar and green tea powder in warm water. Sift the glutinous rice flour and wheat starch into a bowl. Pour the green tea liquid into the flour mixture and whisk until a smooth, lump-free batter forms.
Steam the Dough
Pour the batter into a heatproof dish and cover with foil. Steam over high heat for 20 minutes. Halfway through steaming, uncover and stir the dough vigorously to ensure even cooking, then cover and continue.
Knead and Shape
Remove the cooked dough from the steamer. While it is still hot, add the vegetable oil. Put on disposable gloves to protect your hands from the heat and stickiness. Knead the dough until the oil is fully incorporated and the surface is smooth and elastic.
