Soybean sprouts as needed
Glass noodles (sweet potato noodles or vermicelli) as needed
Cilantro as needed
Green onion as needed
Garlic as needed

Instructions

Prepare ingredients

Skin the soybean sprouts if desired. Wash the glass noodles thoroughly. Finely chop the cilantro, green onion, and garlic.

Blanch soybean sprouts

Boil water and cook the soybean sprouts until just tender. Remove and rinse immediately under cold water. Drain well and set aside.

Cook glass noodles

Blanch the glass noodles in boiling water until soft. Drain and rinse under cold water. Drain well.

Toss and serve

Combine the drained soybean sprouts and glass noodles in a bowl. Add the chopped aromatics and toss to mix. Serve cold.
