Step 1
Wash the scallion and cut into segments; wash the ginger, peel and smash part of it, and mince the remainder for later use; repeatedly wash the pig's tripe with clean water; wash the green and red chili peppers and cut them into shreds.

Bring water to a boil, blanch the pig's tripe, remove and scrape it clean once it turns white, then trim off excess fat.
Step 3
Clean the pot, add fresh water and bring to a boil, then add the pig's tripe, scallion segments, ginger pieces, chili peppers, star anise, Sichuan peppercorns, and cooking wine. Bring to a rolling boil over high heat, skim off any foam, then reduce to low heat to simmer.
Step 4
After about 1 hour, remove the pig's tripe, let it cool, cut into shreds and arrange on a plate, then add the chili shreds.

Mix the refined salt, MSG, aromatic vinegar, and sesame oil until well combined, drizzle the mixture over the tripe and chili shreds, then sprinkle with minced ginger and serve.
