Spinach and Bean Sprout Soup

Ingredients

Spinach (picked clean, washed, cut into segments, blanched and drained) 200 g
Mung bean sprouts (trim ends, picked clean and washed, cut a few times if very long, blanched and drained) 100 g
Dog meat (remove fascia, cut into thin strips 3cm long and 1cm wide) 100 g
Yellow soybean paste 50 g
Chili paste 15 g
Clear rice soup 500 ml
Soy sauce (for marinating dog meat) 10 g
Minced garlic 10 g
Sesame oil (part for marinating, part for finishing when serving) 5 g
Shredded scallion 10 g
Ground pepper 2 g
Shredded ginger 5 g
MSG 1 g
Soybean oil (for stir-frying) 25 g

Blanch Ingredients

Pick and wash the spinach clean; trim the ends of the mung bean sprouts, pick clean and wash, cut the sprouts a few times if they are very long; blanch the spinach segments and mung bean sprouts separately in boiling water, remove, drain excess water, and set aside.

Marinate Dog Meat

Remove fascia from the dog meat, cut into thin strips 3cm long and 1cm wide, place in a ceramic bowl, add soy sauce, minced garlic, sesame oil, shredded scallion, shredded ginger, and ground pepper, mix well, and marinate until flavorful.

Stir-fry to Make Soup

Heat a wok over high heat, add soybean oil, heat to about 70% hot, add the dog meat strips and stir-fry briefly, pour in the clear rice soup, add yellow soybean paste and chili paste, stir to mix evenly, bring to a boil over high heat, add mung bean sprouts and cook briefly, then add spinach, drizzle with sesame oil, serve in a bowl, and it is ready.
