Cookies with melted colored candy centers that resemble stained glass and can be hung on windows as decoration.
Ingredients
Instructions
Step 1
Place the flour, baking soda, cinnamon and butter in a food processor and mix until the texture resembles breadcrumbs.
Step 2
Add the sugar, corn syrup and egg yolk, and blend again until a workable dough forms.
Step 3
Turn the dough out onto a lightly floured work surface and knead until smooth. Wrap in cling film and chill for at least 30 minutes.
Step 4
Preheat the oven to 180°C (gas mark 4 / 350°F). Line 2 large baking trays with baking paper.
Step 5
Roll out the dough on a lightly floured work surface. Cut into strips, then diagonally into diamond shapes.
Step 6
Using a sharp knife, cut out a small diamond in the centre of each large diamond and remove it, leaving a 1 cm-wide border.
Step 7
Carefully transfer the diamonds onto the paper-lined trays, spaced slightly apart. Use a skewer to pierce a hole at one end of each biscuit for threading the ribbon.
Step 8
Bake for 5 minutes. Use the end of a rolling pin to crush the candies.
Step 9
Remove from the oven and quickly place about 2 crushed candies of the same colour in the centre of each biscuit.
Step 10
Return to the oven and bake for another 5 minutes, until the candies have melted. Once out of the oven, if the holes have closed up during baking, pierce them open again.
Step 11
If the candies haven't filled the centre of the biscuit during baking, smooth them out with the tip of a brush before they cool.
Step 12
Leave the biscuits on the baking paper until the candies have hardened and the biscuits are completely cool, then carefully remove them.
Step 13
Thread ribbons of different lengths through the biscuit holes. Hang up the stained-glass biscuits to decorate the room.
