Tuile Cookies (TUILES
A crispy, wafer-thin cookie shaped while still warm.
Ingredients
egg white

extra fine powdered sugar
50 g
melted butter (warm)
25 g
all-purpose flour
25 g
sliced almonds (optional)
to taste
Instructions

Whip Egg Whites
Place the egg whites in a bowl and whip to stiff peaks. Gently fold in the powdered sugar until the mixture is stiff and glossy (similar to meringue).

Combine Ingredients
Fold in the warm melted butter. Let rest for a few minutes.

Prepare Baking Sheets
Preheat the oven to 190°C (th. 6). Lightly grease 2 to 3 baking sheets or line them with parchment paper.

Shape the Dough
Place spoonfuls of the dough on the prepared baking sheets, leaving enough space for the cookies to spread.

Bake and Shape
Bake for about 10 minutes until golden brown with cracked surfaces. While hot, shape the cookies into the desired form (such as tuile shape), or let them rest on the baking sheet for 2 minutes to harden, then transfer to a cooling rack.
