Xianren Congee (Immortal's Porridge)
Polygonum multiflorum (he shou wu) is decocted to extract its juice, then cooked with japonica rice and red dates to make a porridge. It is traditionally said to nourish the blood and benefit the liver, strengthen essence and tonify the kidneys, and help darken the hair.
Ingredients
He Shou Wu (Polygonum multiflorum, decocted in a clay pot to extract juice)
30-60 g
Japonica rice
60 g
Red dates (jujubes)

Brown sugar (rock sugar can be substituted)
to taste
Instructions

Decoct the He Shou Wu
First decoct the He Shou Wu in a clay pot to extract the juice, then strain out the residue.

Cook the congee
Add the japonica rice and red dates, and simmer the congee over low heat.

Season and serve
Once the congee is cooked through, add brown sugar or rock sugar to taste, bring it back to a boil once or twice, and serve hot.
