Prepare the dry mixture
Sift the milk powder and cornstarch together into a small bowl. This removes any lumps and ensures a smooth texture in your final bites.
Combine yogurt with dry ingredients
Add the thick yogurt to a larger bowl. Gradually fold in the sifted milk powder and cornstarch mixture until completely smooth. The mixture should be thick but spreadable—if it seems too stiff, your yogurt wasn't thick enough.
Beat egg whites to stiff peaks
Pour egg whites into a clean, dry mixing bowl. Add lemon juice. Beat on medium speed until frothy, then slowly add sugar. Continue beating until the meringue holds stiff, glossy peaks when you lift the beaters.
Fold together gently
Add about one-third of the meringue to the yogurt mixture and fold gently to lighten it. Then carefully fold in the remaining meringue in two additions. Work quickly but gently to keep the air bubbles intact.
Pipe and bake
Preheat oven to 225°F (105°C). Line a baking sheet with parchment. Transfer mixture to a piping bag with a small round tip. Pipe small mounds about 1 inch apart. Bake for 50-60 minutes until set but still pale. Turn off oven and let cool inside with door cracked for 10 minutes.
