Apple Spice Oatmeal Cookies

Ingredients

quick-cooking oatmeal 1¾ cups
all-purpose flour 1½ cups
baking powder 2 teaspoons
baking soda ¼ teaspoon
salt ¾ teaspoon
cinnamon powder 1 teaspoon
ginger powder ¼ teaspoon
unsalted butter (divide 1 stick softened and 2 tablespoons for frying) 10 tablespoons (1¼ sticks)
Granny Smith apple (peeled, cored, cut into 1/4-inch dice) 1
frozen apple juice concentrate 2 tablespoons
light brown sugar (firmly packed) 1 cup
fine granulated sugar 1/2 cup
large egg 1
vanilla extract 2 teaspoons
dark raisins 1 cup
walnuts (chopped) 1 cup

Instructions

Preheat & Prepare

Place the oven rack in the center of the oven and preheat to 375°F (approximately 190°C). Lightly grease two baking pans.

Mix Dry Ingredients

In a medium bowl, combine the oats, flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.

Pan-fry Apples

In a medium skillet, heat 2 tablespoons of butter over medium heat until melted and foaming. Add the apples and pan-fry until softened, stirring occasionally, for about 3 minutes. Mix in the apple juice concentrate and pan-fry for another 1 minute. Set aside to cool.

Cream Butter and Sugar

Using an electric mixer (with paddle attachment), beat the remaining ½ cup (1 stick) of butter and sugar at medium speed for about 1 minute. Add the egg and vanilla extract, beating until incorporated. Add the flour mixture in three batches on low speed, mixing until just combined. Fold in the pan-fried apples, raisins, and walnuts using a wooden spoon.

Bake

Scoop the dough using a round tablespoon and drop onto the baking pans, spacing them 2 inches apart. Moisten your palms to prevent sticking and gently flatten the dough. Bake for 11 to 13 minutes until the bottoms are golden. Transfer the cookies to a wire rack to cool completely.
