Chive, Pork, and Shrimp Dumplings

My family always enjoys several meals of dumplings or stuffed buns made with chives this time of year, and they are utterly delicious. Chives turn tough and lose their bright, fresh flavor once the season passes, so try this juicy, burst-of-flavor filling while chives are still at their best.

Remove any wilted leaves from the chives, rinse thoroughly with clean water, and drain well.

Add a small amount of water to the ground pork and beat until it becomes sticky—this is the key to a juicy filling. Then add soy sauce and salt to season, stir well, mix in peanut oil, and finally peel the shrimp, dice them, and fold into the mixture.

Finely chop the chives and add them to the filling, mixing thoroughly. The chive, pork, and shrimp filling is now ready.

In advance, add water to the flour and knead into a dough of medium firmness. Let it rest briefly, knead again, divide into small pieces, flatten them, and roll out into round dumpling wrappers.
