Claypot Rice with Cured Meat

Kids love this claypot rice with cured meats. Out of Chinese sausage, we used cured pork and cured duck leg instead — equally delicious.

Claypot Rice with Cured Meat

Ingredients

jasmine rice 2 cups
Chinese cured pork 1
cured duck leg 1
green vegetables to taste
egg 1
oil 2 tbsp
scallions 2

Instructions

Step 1

Rinse the jasmine rice. (I use Thai jasmine rice.)

Put the rice in a clay pot and add 3 rice-measuring cups of water. (The rice-to-water ratio is 1:1.5.)

Cut the cured pork into thin slices and chop the cured duck leg into small pieces.

Finely chop the scallions.

Cook over medium heat until the water starts to bubble up, then turn to low heat and cook until the water is almost gone.

Arrange the cured pork and cured duck leg on top. Place the duck leg skin and the fattier pieces of cured pork along the edge of the clay pot so the oil drips down along the side and runs under the rice.

Rotate the pot so the edges heat evenly.

Once the water has dried, slowly drizzle a ring of oil around the edge of the pot to make the rice crust crispier. (You can use vegetable oil or lard.)

Turn to the lowest heat and slowly rotate the pot so the sides also heat up, forming the rice crust.

Once the rice crust has formed, move the meat from the center toward the edges, crack an egg in the center, cover with the lid, turn off the heat, and let it steam for 15 minutes.

While the rice is steaming, wash and blanch the green vegetables.

Finally, add the blanched green vegetables on top and sprinkle with the chopped scallions.

When serving, drizzle with soy sauce, mix well, and enjoy.

Simple claypot rice soy sauce: mix 2 tbsp premium light soy sauce, 2 tbsp hot water, and 1 tsp sugar, then microwave on high for 15 seconds.
