Instructions

Clean the greens
Pick through the bitter greens to remove any debris, then wash them thoroughly.

Blanch the greens
Bring a pot of water to a boil. Add the washed bitter greens and blanch briefly to remove some of the bitter flavor.

Cool and drain
Remove the greens from the boiling water and drain well. Rinse or soak in cold water to stop the cooking process and cool down completely.

Season and serve
Drain the cooled greens thoroughly and toss with seasoning or dressing to taste.
