Ingredients
Instructions
Prepare the Asparagus
Trim the woody ends of the asparagus and peel the lower stalks if they are thick. Blanch the spears briefly in boiling salted water for about 2 minutes, then immediately plunge them into an ice bath to stop cooking and keep them crisp. Drain well.
Wrap the Rolls
Cut the asparagus into lengths that fit your bacon slices. Wrap a slice of bacon around each asparagus spear (or a small bundle of thin spears). Secure the loose end of the bacon with a dab of cornstarch slurry or a toothpick to prevent unrolling during cooking.
Sear the Rolls
Heat a flat skillet over medium heat. Add the olive oil and butter, allowing the butter to foam. Toss in the sliced garlic and sauté until fragrant. Place the bacon rolls in the pan and cook on all sides until the bacon is crispy and browned. Finish with a generous sprinkle of freshly ground black pepper.
