Lu-style Yi Pin Shou Tao (First-Rank Longevity Peach) dessert: Featuring a red date paste filling wrapped in a silky yam paste casing, this sweet is steamed then finished with a glossy sweet starch glaze. Shaped to mimic a celestial peach, it has a fragrant, sweet, and delicious flavor.

Prepare the date paste filling
Wash the long red dates, boil until soft, peel and remove the pits to make date paste. Place into a wok, add cooked lard and white sugar, and cook down into a date paste filling.
Prepare the yam paste
Wash the Chinese yam, steam until soft, peel and remove any spots, then mash into a fine paste with a knife.
Prepare the ingredients
Cut the hawthorn cake into long strips. Finely mince the red preserved fruit shreds and green plums.
Shape the peach
Take a large plate, place the date paste in the center, and cover with yam paste to form a peach shape with two leaves. Smooth the surface, use green preserved fruit shreds to outline the leaf veins. On the peach body, arrange hawthorn cake strips to form the character "寿" (longevity). Garnish the top tip and lower half with minced red preserved fruit shreds, and place the green plum on the peach stem.
Steam
Steam in a steamer for 5 minutes, then remove.
Pour the sauce
In a soup pot, add water and white sugar, dissolve over medium heat, thicken with wet starch to make a thin sauce, and gently pour over the longevity peach. Serve.
