Story

These vibrant dumplings bring a festive touch to the table with their naturally colored wrappers and hearty lamb filling. Boiled until tender and served hot, they offer a delightful mix of textures and rich aromas perfect for a celebratory meal.

Ingredients

All-purpose flour to taste
Buckwheat flour to taste
Purple sweet potato 1
Pumpkin to taste
Spinach to taste
Scallion to taste
Lamb to taste
Green radish 1
Warm water to taste
Oil to taste
Salt to taste
Vinegar to taste
Light soy sauce to taste
Chili powder to taste
Five-spice powder to taste
Ginger powder to taste

Instructions

Step 1

Steam the pumpkin, peel it, blanch the spinach and let it cool, peel the purple sweet potato and set aside.

Wash the lamb and drain the water, wash the green radish and set aside.

(Purple dough) Take an appropriate amount of flour, add one purple sweet potato, mix with warm water to form a dough, adjust the firmness to your preference.

(Green dough) Take an appropriate amount of flour, add the blanched spinach, no need to add water, just knead into a dough.

(Yellow dough) Take an appropriate amount of flour, add the steamed pumpkin, no need to add water, just knead into a dough.

(White dough) Take an appropriate amount of flour, add warm water to form a dough, adjust the firmness; (Light brown dough) Take an appropriate amount of flour and buckwheat flour in a 1:1 ratio, add warm water to form a dough, adjust the firmness.

Let it rest for about half an hour, knead it twice in between.

Chop the green radish and remove the water.

Chop the lamb into a meat paste.

Chop the green onion and set aside.

Put all ingredients in a container, add salt, five-spice powder, and ginger powder, mix well and marinate.

Pour the fried Sichuan pepper oil into the meat filling.

Roll the rested dough into strips.

Take roughly equal portions of the dough to make dumpling wrappers.
