Fried Shrimp Rice Balls

Ingredients

shrimp 4
low-gluten flour to taste
egg 1
breadcrumbs to taste
salt, pepper a pinch
nori sheets 2 slices
cooked white rice 320 g
mayonnaise 100 g
diced onion (wrap in cheesecloth and rinse under cold water to remove pungent flavor) 2 tbsp
hard-boiled egg 1
pickled cucumber 1/2
salt a pinch
pepper a pinch
lemon juice a pinch

Instructions

1

Prepare Diced Onion

Wrap the diced onion in a piece of cheesecloth and rinse under cold running water to remove the pungent taste.

2

Make Tartar Sauce

Chop the hard-boiled egg and pickled cucumber into small pieces, then mix with the prepared onion, mayonnaise, salt, pepper, and lemon juice until evenly combined to form tartar sauce.

3

Prepare Egg Wash

Beat the egg into a smooth liquid and set aside.

4

Fry the Shrimp

Remove the heads, shells, and intestinal veins from the shrimp, make diagonal cuts on the underside, then press the backs to straighten and lengthen them. Sprinkle with a small amount of salt and pepper, then coat sequentially in low-gluten flour, egg wash, and breadcrumbs. Fry in medium-temperature oil until crispy.

5

Assemble Rice Balls

Spread tartar sauce on the fried shrimp, wrap each one in cooked white rice to form rice balls, then attach a nori sheet to each to serve.
