This classic Chinese dessert soup combines the subtle sweetness of snow pears with the earthy richness of lotus seeds and the gentle honey notes of goji berries. Serve warm on a chilly day or chilled during summer.

Ingredients

snow pears 2 medium (about 300g)
fresh lotus seeds 100g
goji berries 15g
water 800ml

Prepare the fruit

Peel the snow pears and cut them into small, bite-sized cubes. Rinse the fresh lotus seeds and set aside.

Cook the base

Add the cubed pears and lotus seeds to a medium pot. Pour in the water and bring to a rolling boil over high heat. Reduce to a gentle simmer and cook for about 20 minutes, until the pears are tender and the lotus seeds have softened.

Finish with goji berries

Rinse the goji berries and add them to the pot. Continue simmering for 2 minutes until they plump up and release their deep red color. Remove from heat.

Ladle the soup into bowls and serve warm, or let cool and refrigerate for a refreshing chilled dessert.
