Story
This chilled mousse cake combines the rich flavors of mascarpone and coffee liqueur with a playful, colorful finish. After setting in the fridge, the smooth surface is decorated with a Hello Kitty stencil using strawberry, cocoa, and pumpkin powders for a charming treat.

Step 1
Prepare all ingredients.
Step 2
Use the baked cake slices and a mold to cut out 2 shapes.
Step 3
Whisk 3 egg yolks and 30g sugar over hot water until pale.
Step 4
Place mascarpone cheese in a bowl, stir over hot water into a smooth paste without lumps, then add the egg yolk mixture and mix well.
Step 5
Soak gelatin sheets in cold water in advance. Heat 75g milk in a bowl over water, add the softened gelatin sheets and stir until completely melted, then pour into the cheese paste and mix thoroughly.
Step 6
Add 50g sugar to 210g heavy cream in three batches and whip to 60% stiffness. Fold the whipped cream and cheese paste together evenly.
Step 7
Brush the cake slices with coffee liqueur and place them in the mousse ring.
Step 8
Pour half of the cheese paste into the mousse ring, then place the brushed cake slices on top, pour in the remaining cheese paste, and smooth the surface.
Step 9
Place the mousse ring in the refrigerator to chill for at least 4 hours. Place the KT face stencil on top, sprinkle with powder, and when removing the mold, wrap the mousse ring with a hot towel for a moment, then lift the ring up to release it smoothly.
