Pure White Lotus Seed Paste

Homemade white lotus seed paste — fragrant, mildly sweet, and delicious. Because the sugar content is relatively low, once used in mooncakes and after the oil returns, store in the refrigerator and consume within a week. This recipe yields about 1550 g of finished paste, though the exact amount depends on the quality of the lotus seeds.

Pure White Lotus Seed Paste

Ingredients

De-seeded dried lotus seeds 500g
White sugar 150g
Maltose 70g
Corn oil 160g
Water as needed

Instructions

1

Step 1

Rinse the de-seeded white lotus seeds and soak in water for 2-3 hours.

2

Step 2

Split the lotus seeds and pick out any remaining lotus seed hearts. (Be very careful with this step, as the lotus seed hearts are bitter and will affect the taste.)

3

Step 3

Put the prepared lotus seeds into an electric pressure cooker, add clean water, the water level should be about 1 finger width above the lotus seeds.

4

Step 4

Press the bean/tendon cooking button to start cooking, you can open the lid after natural pressure release.

5

Step 5

Use a hand blender to blend the lotus seeds until there are no more granules.

6

Step 6

Pour into a non-stick pot, add white sugar, maltose and 1/3 of the corn oil. You can start stir-frying over medium-high heat at first, keep stirring constantly to prevent burning the pot.

7

Step 7

Stir-fry until the first batch of oil is completely absorbed, the lotus seed paste thickens slightly and you can see streaks, then pour in another 1/3 of corn oil, continue stir-frying until the oil is fully absorbed.

8

Step 8

Continue stir-frying until it becomes thick, pour in the remaining oil and stir-fry. (The oil should be added in three batches, only add the next batch after the previous one is fully absorbed.)

9

Step 9

Stir-fry until the paste slightly sticks to the spatula, this consistency is suitable for making buns, if making mooncakes you need to stir-fry until it's drier.

10

Step 10

Stir-fry until the filling clumps together, and it no longer sticks to the pot or spatula, then it's done.

11

Step 11

Cover the surface with plastic wrap and let it cool before use. It will be very smooth and fine.
