Rare Beef Rice Noodles

Step 1
Bring a pot of water to a boil. Crack open the beef bone, then add it and the beef brisket to blanch in hot water. Remove, rinse both separately, and set aside.

Crack open the Chinese cardamom for the broth, then place it and the star anise into a small cheesecloth bag and set aside. Peel the daikon radish, cut it into chunks, and set aside.
Step 3
Prepare a pot of water, add the cheesecloth bag, beef brisket, and beef bone. Bring to a rolling boil over high heat, skim off any surface foam, then reduce heat to low. Add 1/3 of the onion, ginger, daikon chunks, and salt, and simmer for 1 hour. Remove the beef brisket, then continue simmering for 3 more hours. Strain all solids from the broth to leave only clear soup, then add sugar and fish sauce to taste.
Step 4
Let the beef brisket cool completely, then slice it and set aside. Blanch the rice noodles, bok choy, and enoki mushrooms separately. Place the rice noodles in a serving bowl, top with the sliced beef brisket, bok choy, tender beef slices, onion shreds, and enoki mushrooms. Pour the prepared broth over the top, garnish with minced scallion, and serve.
