  2. Steam the preserved eggs for 10 minutes, or use them as-is — either way works for this cold dish.
  3. Add chopped garlic cloves and bird's eye chilies, then pour hot oil over them. Season with sugar, salt, soy sauce, and vinegar, mix well, and marinate for 10 minutes.
  4. For extra aroma, finish with a drizzle of sesame oil or Sichuan pepper oil if available.

Tips:

  • Adjust the amount of bird's eye chilies to taste.
