1 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp cornstarch, a little water, stir well and set aside
Step 2
Dice the beef (you can also slice or cut into strips according to your preference; smaller pieces absorb flavor better). Add 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, mix well with 1 tbsp cornstarch, then mix in 1 tbsp oil and marinate for 10 minutes.

Dice the carrots and potatoes and set aside. Heat oil in a hot wok (hot pan, cold oil method), add the diced carrots and potatoes, stir-fry until slightly charred, then remove and set aside.
Step 4
Using the same hot wok with cold oil method, bloom the chopped scallions until fragrant, then add the beef and stir-fry until it changes color.
Step 5
Add back the diced carrots and potatoes, pour in the prepared sauce, and stir-fry until the sauce thickens.

Add the blanched broccoli, toss evenly, and it's ready to serve and enjoy!
