Spiced Pound Cake

Ingredients

Unsalted butter (softened at room temperature) 230 g
Granulated sugar 650 g
Eggs 5
Whole milk 240 ml
Vanilla extract 1 tsp
Lemon extract ¼ tsp
Ground cloves ¼ tsp
Ground cinnamon ¼ tsp
Ground ginger ¼ tsp
Ground nutmeg ¼ tsp
Cake flour 400 g
Baking soda ½ tsp
Salt ½ tsp
25 cm ring mold (greased and floured) 1

Instructions

1

Preheat the oven

Preheat the oven to 170°C (325°F) gas mark 3.

2

Cream the butter and sugar

Place the butter and sugar in a stand mixer fitted with the paddle attachment and beat until light and fluffy.

3

Add the eggs

Add the eggs one at a time, beating well after each addition and using a rubber spatula to scrape down any unmixed ingredients from the sides of the bowl. Add the milk, vanilla extract, and lemon extract and beat until well combined.

4

Add the dry ingredients

Sift the ground cloves, cinnamon, ginger, nutmeg, flour, baking soda, and salt into another bowl, then add to the butter mixture and stir until all ingredients are incorporated.

5

Bake

Pour the batter into the prepared ring mold and smooth the surface with a spatula. Bake in the preheated oven for 60-70 minutes, or until golden brown and a toothpick inserted comes out clean. Let cool slightly, then remove from the mold and place on a cooling rack to cool completely.
