Today's braised pork with quail eggs is just perfect with rice!

Ingredients

pork belly
quail eggs
ginger
star anise
dark soy sauce
cooking wine
salt
rock sugar
bay leaves

Instructions

Step 1

1️⃣Add pork belly to cold water with scallion, ginger slices, and cooking wine. 2️⃣Boil the pork belly until it changes color, then remove, rinse, and cut into large chunks. 3️⃣Boil the quail eggs until done and peel them, then fry in hot oil until the surface is golden and wrinkled. 4️⃣Heat oil and stir-fry the pork belly until the fat renders out and both sides are golden brown.

5️⃣Add rock sugar directly to the meat and stir-fry until a caramel color forms. 6️⃣Add scallions, ginger, star anise, cinnamon bark, and bay leaves; stir-fry until evenly combined. 7️⃣Add appropriate amounts of cooking wine, light soy sauce, dark soy sauce, and oyster sauce; stir-fry until evenly combined. 8️⃣Add hot water to cover the ingredients and simmer over medium-low heat for 30 minutes.

9️⃣Add the quail eggs and continue cooking for 15 minutes. Reduce the sauce over high heat, adjust seasoning to taste, sprinkle with chopped scallions, and serve.
