Tomato Pork Sauce Noodles 🍜
Every time I make this tomato meat sauce noodles, the kids finish two bowls. The minced meat fully coats the noodles, making it especially aromatic. Prepare 250g of flour, 1.5g of salt, and 120g of water.

Stir into a flaky dough texture, then knead into a smooth dough.

Divide the dough into 6 equal portions, then roll each into a long strip.

Bring water to a boil in a pot, pull and stretch the noodles into the pot as you go (stretch them thinner for thin noodles, thicker for thick noodles, according to your preference), then fish them out into a bowl once they float and set aside.

Heat oil in a pan, add the minced pork and stir-fry until fragrant and the meat changes color, then add minced ginger and minced white scallion, and stir-fry until fragrant.

Season with 2 tablespoons of tomato paste, 1 tablespoon each of light soy sauce and oyster sauce, a small amount of sugar, salt, and black pepper, then stir-fry evenly.

Pour in the starch water mixture (100g water, 10g starch), and cook until the sauce thickens.
