Tonic Qi-Replenishing Congee

Greatly replenishes vitality and strengthens the spleen and stomach; made by cooking japonica rice in a decoction of astragalus root and ginseng.

Tonic Qi-Replenishing Congee

Ingredients

Astragalus root (sliced) 30 g
Ginseng (sliced) 10 g
Japonica rice 90 g
White sugar to taste

Step 1

Slice the astragalus root and ginseng, soak in cold water for half an hour, then transfer to a clay pot and bring to a boil. Once the concentrated juice is extracted, pour it out, add fresh cold water to the pot of ginseng and astragalus, and repeat the boiling process to extract the juice a second time.

Step 2

Combine the juices from the first and second decoctions, then divide the mixture into two portions. Use one portion in the morning and the other in the evening, each time cooking it together with the japonica rice and water to make a congee. Stir in the white sugar once the congee is done.
