Step 1

I prepared ten shrimp, meaning there's still plenty more to enjoy! Remove the heads, peel the shells, and leave the tail shell on—it's just to make them easier to handle when eating and to look nicer, but it's optional.

Use a small knife to slice open the inner side of the shrimp (the side with the whiskers). Don't press too hard or you'll cut it in half. When you see the vein, gently pull it out.

Place the prepared shrimp in a container, pour in a little cooking wine, a little white pepper powder, and a little salt. Mix well and marinate for five minutes. I also sprinkled in some black pepper, but that's optional and won't affect the flavor.

Add cornstarch and stir. Prepare the egg wash, breadcrumbs, and preheat oil in a pot to about 70% hot (around 350°F). First, evenly coat with the egg wash, then completely cover with breadcrumbs.
