Ingredients

water chestnuts (peeled, washed and sliced) 300 g
water chestnut starch 100 g
wheat starch 30 g
egg yolk powder 30 g
water (for ingredient B) 150 ml
fine granulated sugar 200 g
water (for ingredient C) 800 ml
butter 20 g

Instructions

1

Step 1

Wash the water chestnuts and slice them.

2

Step 2

Bring a pot of water to a boil, blanch the water chestnut slices briefly, then drain and set aside.

3

Step 3

Combine the water from ingredient C and the sugar in a pot and bring to a boil. Add the butter and cook until melted, then stir in the water chestnuts from Step 2 until evenly mixed.

4

Step 4

Stir ingredient B together until smooth to form a batter slurry.

5

Step 5

Slowly pour the slurry from Step 4 into the mixture in Step 3. Reduce the heat to low and stir constantly as you add the slurry until the mixture thickens into a water chestnut paste.

6

Step 6

Take a square pan, brush it with a thin layer of oil, pour in the water chestnut paste from Step 5, and smooth the surface.

7

Step 7

Place the pan from Step 6 into a steamer.

8

Step 8

Bring the steamer water to a boil and steam over high heat for 20 to 30 minutes until cooked through. Remove, let cool, then cut into small cubes to serve.
