Zhacai Noodles with Fried Sauce
This Chinese recipe for Zhacai Fried Sauce Noodles features noodles, ground meat, potato, diced mature zhacai (preserved Sichuan mustard tuber), and cooking oil.

Step 1
Prepare the ground pork and add chopped scallion and ginger. Dice the potatoes. Dice the block-style aged zhacai (soak for one hour, changing the water three or four times to leach out the salt). Julienne the carrots and cucumbers. Add a little water to the sweet bean sauce.

Heat the oil to about 70% hot.
Step 3
Add the ground pork and chopped scallion/ginger, and stir-fry until the meat turns pale.

Add Sichuan peppercorn powder and stir to combine.
Step 5
Add light soy sauce and stir to combine.
Step 6
Add sweet bean sauce and stir to combine.
Step 7
Stir-fry until the ground pork is evenly colored.
Step 8
Add the diced potatoes and stir to combine.
Step 9
Add the diced zhacai and stir to combine.
Step 10
Reduce to low heat and simmer for 10 minutes until the potatoes become tender.
Step 11
Stir in the cornstarch slurry to thicken the sauce, and cook the noodles in the meantime.

Top with the fried sauce and serve.
