Udon Salmon Noodles

Udon Salmon Noodles

Ingredients

light soy sauce (divided use) 3 tbsp
mirin (divided use) 2 tbsp
sugar 1 tsp
salmon fillet (peeled, cut into 1-inch cubes) 350 g
udon noodles 1 pack (375 g)
vegetable oil (divided use) 2 tbsp
sesame oil 1 tbsp
pickled ginger (cut into thin strips, reserve 1 tbsp of marinade) 1 tbsp
broccoli (chopped and steamed) 1 bunch

Instructions

Marinate Salmon

In a bowl, mix 1 tbsp light soy sauce, 1 tbsp mirin and sugar, stir until the sugar is dissolved. Add the salmon and mix well, marinate for 15 minutes.

Cook Noodles

Meanwhile, cook the udon noodles according to the package instructions. Drain the water and set aside.

Pan-fry Salmon

Heat 1 tbsp vegetable oil in a large frying pan or wok over medium heat. Take the salmon out of the marinade, put it in the pan and fry until golden and cooked through, flip on all sides, this takes about 2 minutes.

Mix Sauce

Transfer the fried salmon to a large bowl, add the remaining light soy sauce, mirin, vegetable oil, sesame oil, shredded ginger and pickled ginger marinade, mix well.

Serve

Divide the udon noodles into 4 bowls, evenly top with steamed broccoli and salmon, then serve.
