Prepare the shrimp
Clean the shrimp by snipping off the legs and antennae. Slice along the back to devein and butterflying them. Marinate with a pinch of salt, white pepper, and cooking wine for a few minutes.
Mix the sauce
In a bowl, whisk together the light soy sauce, vinegar, tomato ketchup, sugar, cornstarch slurry, 2g of salt, and the minced garlic until smooth.
Sear the aromatics and shrimp
